Recipes - Goat Cheese on a Bed of Lettuce

Make ahead note:

The salad can be completely prepped ahead and assembled at the last minute.

Ingredients:

  • 5-6 cups Boston or other mild letuce
  • 2 Tbl chopped shallots
  • ½ Cup pecans, roasted at 350 degrees until lightly colored
  • 1/3 cup extra virgin olive oil
  • 5 Tbl Balsamic vinegar
  • 2 Tbl Sherry vinegar
  • 4-6 oz goat cheese
  • 2 Tbl honey
  • Salt and pepper

Make the vinaigrette by whisking the 3 Tbl of the Balsamic and the sherry vinegars with salt and pepper. Slowly whisk in the oil and taste after adding ¼ cup. Add more oil to taste. Toss the greens and the shallots with the vinaigrette.

Arrange the salad on plates. Place the goat cheese in the center. Whisk together the honey and remaining vinegar. Drizzle on the cheese. Sprinkle with the nuts.
